Spaghetti Squash with Chicken + Pesto

I have been making this meal on repeat recently. Homemade vegan pesto — the rest of the dish is clearly not vegan but you can make any substitutes you need to make it a fully vegan meal! — with spaghetti squash, chicken and topped with a little cheese. So simple and so delicious!!

Recipe:

I used ground chicken, cooked in olive oil seasoned with garlic, onion salt & pepper while the spaghetti squash cooked at 400 for 20 minutes.
Add everything + chopped tomatoes to the pan, sprinkle cheese on top, let it melt & enjoy!!

For the pesto:
— 1 cup of soaked cashews
— 2 tbsp olive oil
— 2 tbsp lemon juice
— 5 cloves of garlic
— 1/2 cup of warm water
— 1 cup fresh basil
— pinch of salt
